Filling ingredients:

- 2 cups napa cabbage finely shredded
- 2 cups bean sprouts
- 1 cup carrots finely shredded
- 1 cup mushrooms finely chopped
- 1/2 cup finely sliced green onion
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 1 1/2 tablespoon white sugar
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
For preparing:
- 8-12 spring roll wrappers *see notes
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 2-3 tablespoon oil
Instructions
- Prepare the filling: Heat oil in a pan, sauté cabbage, bean sprouts, carrots, and mushrooms until softened.
- Add seasonings: Stir in green onion, cornstarch mixture, sugar, salt, and pepper. Cook until vegetables are tender-crisp.
- Wrap the filling: Place filling on a spring roll wrapper, roll tightly, sealing edges with cornstarch mixture.
- Air fry: Preheat air fryer, brush spring rolls with oil, air fry at 400°F for 12-15 minutes, flipping halfway through.
Notes
- You can find frozen spring roll wrappers at most Asian grocery stores.
- For best results, always preheat the air fryer before cooking.
- For extra crispiness, brush oil on the spring rolls instead of using a spray bottle.
