Apple Base
- 1 apple (Honeycrisp or Pink Lady preferred), cored and sliced into ¼-inch thick slices (3-4 slices)
Topping Mixture
- ⅓ cup unsweetened shredded coconut
- 3 tablespoons almond butter or cashew butter (or seed butter of choice)
- ½ tablespoon maple syrup
Chocolate Drizzle
- 2 tablespoons chocolate chips
- ½ teaspoon coconut oil
Instructions
- Prepare Apple Slices: Slice and core the apple into ¼-inch thick slices, typically yielding 3 to 4 slices. Lay them flat on parchment paper.
- Mix Topping: In a bowl, combine the unsweetened shredded coconut, almond or cashew butter, and maple syrup. Stir well until the mixture is fully blended.
- Assemble Topped Apples: Spoon the coconut and nut butter mixture on top of each apple slice evenly. Place them back on the parchment paper.
- Melt Chocolate Drizzle: Gently melt the chocolate chips together with coconut oil until smooth. Drizzle the melted chocolate evenly over each topped apple slice.
- Chill and Set: Place the assembled apple slices into the freezer for about 5 to 10 minutes or until the chocolate hardens and the snack firms up. Serve and enjoy!
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. Note that the apple slices may lose some crunch but will remain tasty.
- Freezing: To freeze, place the assembled apple slices on a baking sheet and freeze until solid. Then transfer to a freezer-safe bag and store for up to 1 month. Thaw for a few minutes before eating.
