Topping

Instructions
- Preheat Oven. Preheat your oven to 375°F to prepare for baking the apples evenly.
- Prepare the Topping. In a small bowl, mix together the rolled oats, almond flour, brown sugar, crushed walnuts, apple pie spice, and sea salt. Work in the firm coconut oil with your hands until the mixture becomes crumbly. If it feels too dry, add a few drizzles of water until it holds together slightly when pinched.
- Prepare Apples. Using a spoon, scoop out a bit of the center flesh of each apple half to create space for the topping. Place the apple halves in an ungreased baking dish large enough to fit them comfortably. Drizzle melted coconut oil over the apples and rub it all over to coat.
- Initial Bake. Cover the baking dish with foil and bake the apples for 10 minutes to start softening them.
- Add Topping and Finish Baking. Remove the foil and evenly spoon generous amounts of the oat and nut topping onto each apple half. Drizzle a bit more melted coconut oil on top of the topping. Return the apples to the oven and bake uncovered for another 20 minutes or until the apples are soft and the topping is crisp and golden.
- Cool and Serve. Allow the baked apples to cool slightly before serving warm with a scoop of vanilla ice cream for a perfect contrast of warm and cold flavors.
