For The BBQ Chicken Salad

  • 1.5 cups chopped or shredded cooked chicken
  • 1/4 cup BBQ sauce plus more for the dressing
  • 68 cups of sliced fresh romaine lettuce
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup canned, cooked corn
  • 1 cup sliced cherry tomatoes
  • 1 ripe avocado, diced
  • 1/2 cup diced red onion
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cashews

For the Creamy BBQ Dressing

  • 1/4 cup mayo
  • 1/4 cup BBQ sauce
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Add the cooked chicken to a bowl and pour the BBQ sauce over it and toss to coat the chicken. Arrange the sliced lettuce on the bottom of a large bowl and then add the rest of the salad ingredients on top along with the BBQ chicken.
  2. Mix up the dressing by combining all of the dressing ingredients in a bowl and mixing until creamy.
  3. Pour the dressing over the salad and lightly toss.
  4. Serve cold and enjoy!

Notes

  • Cut the lettuce into ribbons by rolling it up in a bunch and running a knife through it for easier eating.
  • Use cooked chicken breast, thighs, or shredded rotisserie chicken.
  • Dressing can be made ahead and stored in the refrigerator for up to 2 days.
  • Store the salad ingredients and dressing separately for optimal freshness.
