Ingredients

Corn:

  • 3 ears fresh corn (or 2 1/4 cups frozen or canned corn)

Black Beans:

  • 2 15-ounce cans black beans, rinsed and drained

Vegetables:

  • 2 red bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tablespoons minced shallots

Seasonings:

  • 2 teaspoons salt
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons sugar
  • 9 tablespoons extra virgin olive oil
  • 1 teaspoon lime zest
  • 6 tablespoons fresh lime juice

Additional:

  • 1/2 cup chopped fresh cilantro, plus more for garnish
  • 2 Hass avocados, chopped

Instructions

  1. Prepare Corn: Boil the fresh corn for 3 to 4 minutes, then cut the kernels off the cobs.
  2. Mix Ingredients: Combine all ingredients except avocados in a bowl and mix well.
  3. Chill: Cover and chill for a few hours or overnight.
  4. Add Avocados: Right before serving, gently mix in the chopped avocados.
  5. Serve: Garnish with cilantro and serve at room temperature.
