Description

These Blueberry Oat Bars are a wholesome and delicious snack made with a naturally sweetened blueberry chia jam layered between a hearty oat and peanut butter base and crumbly topping. Blueberry Chia Jam

  • 1 cup blueberries (fresh or frozen)
  • 2 tbsp water
  • 2 tbsp chia seeds

Oat Bar Base and Topping

  • 1/3 cup maple syrup
  • 2 tbsp coconut oil, melted
  • ½ cup peanut butter
  • 1 cup rolled oats
  • 1 cup oat flour


Instructions

  1. Prepare the Pan: Cover a 5’’x9’’ loaf pan with parchment paper to prevent sticking and to allow for easy removal of the bars once set.
  2. Make the Blueberry Jam: Heat a saucepan over medium-high heat and add blueberries, water, and chia seeds. Bring to a boil, then mash the blueberries while cooking to release their juices and help the water evaporate. Continue until the mixture thickens into a jam-like consistency. Remove from heat and let it cool completely.
  3. Mix the Base: In a large bowl, combine maple syrup, melted coconut oil, and peanut butter until smooth and well mixed.
  4. Add Dry Ingredients: Stir in rolled oats and oat flour into the wet ingredients. Mix thoroughly so everything is evenly combined.
  5. Form the Base Layer: Press about two-thirds of the oat mixture firmly into the bottom of the prepared loaf pan, creating an even and compact base.
  6. Layer the Jam: Spread the cooled blueberry jam evenly over the oat base layer, making sure it covers the surface.
  7. Create the Topping: Crumble the remaining oat mixture over the blueberry jam layer using your fingers, then gently press down with a spoon to pack it down and cover the jam as fully as possible.
  8. Chill to Set: Refrigerate the assembled bars in the pan for at least 3 to 4 hours, allowing them to firm up and bind together.
  9. Slice and Store: Using the edges of the parchment paper, lift the set bars from the pan and slice into 8 equal portions. Store the bars in the refrigerator for up to 7 days.
