Description

These Brie Phyllo Cups with Blackberry and Thyme are elegant, bite-sized appetizers perfect for entertaining. Crispy mini phyllo shells are filled with a sweet blend of blackberry jam and honey, melted creamy brie, and topped with fresh blackberries and fragrant thyme leaves. Lightly baked to melt the cheese and warm the fillings, these delicate cups balance sweet, savory, and herbal flavors beautifully.

Ingredients

Scale

Phyllo Cups & Filling

  • 15 mini phyllo shells (such as Athens brand)
  • 2 tablespoons blackberry jam
  • 2 tablespoons honey
  • 3 ounces brie, rind removed and cut into 1/2” cubes
  • 15 fresh blackberries, rinsed and dried
  • 2-3 sprigs fresh thyme for garnish

Instructions

  1. Preheat the Oven: Set your oven to 325°F (163°C) to prepare for baking the phyllo cups evenly without burning.
  2. Fill Phyllo Shells: Arrange the mini phyllo shells on a baking sheet. Place a small dab of blackberry jam and honey inside each one, then top each with a cube of rindless brie.
  3. Bake Until Cheese Melts: Bake in the preheated oven for 6-8 minutes until the brie has melted and the phyllo shells are lightly golden brown and crisp.
  4. Add Fresh Toppings: Remove the baking sheet from the oven and immediately top each cup with one fresh blackberry and a few thyme leaves for aroma and a fresh herbal note.
  5. Optional Honey Drizzle and Serve: Drizzle additional honey over the cups if desired. Transfer the phyllo cups to a wire rack to maintain crispness and serve right away for best texture and flavor.

Notes

  • Make Ahead: Prepare the phyllo shells filled with jam, honey, and brie up to 2-3 hours in advance and refrigerate. Bake only when ready to serve.
  • Brie Preparation: Use standard brie cheese without rind. Freezing briefly makes it easier to remove the rind and cut the cheese into small cubes. Cream of brie is an alternative for an easier scoopable filling.
  • Keep Shells Crisp: Immediately transfer baked cups to a wire rack to avoid sogginess and keep them crisp until serving.
  • Variations: Add finely chopped walnuts or pecans for texture, substitute blackberries with other berries, use leftover cranberry sauce instead of jam-honey combination, swap honey for maple syrup, or adjust the sweetness by reducing or omitting honey for a tart flavor.
