Ingredients

Garlic Butter:

  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter
  • 1 tablespoon fresh parsley

Dough:

  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar

Filling:

  • 200 grams mozzarella cheese
  • Garlic butter we made previously

Egg Wash:

  • 1 egg

Instructions

  1. Roast Garlic: In a ramekin, place one whole garlic head (cut the top off), drizzle with olive oil, sprinkle with salt, cover with aluminum foil, and roast at 160°C (320°F) for 2 hours until buttery soft.
  2. Garlic Butter: Mix roasted garlic with softened butter, chopped parsley, and 2 tablespoons of garlic oil; set aside.
  3. Yeast Mixture: Combine warm milk, yeast, and honey in a bowl; let it proof for 10 minutes until frothy.
  4. Dough: Mix flours, sugar, milk powder, butter, egg yolks, salt, and yeast mixture. Knead until smooth.
  5. Proof Dough: Let the dough rise until doubled in size, about 1 hour and 30 minutes.
  6. Roll Out Dough: Spread garlic butter on rolled dough, add mozzarella, and roll into a log.
  7. Cut Dough: Divide the dough into 6 portions.
  8. Second Proof: Let the rolls rise for 30 minutes.
  9. Bake: Brush with egg wash, bake at 175°C (350°F) for 20-25 minutes.
  10. Decorate: Brush with garlic butter and parsley before serving.
