Instructions

  1. Prepare the Crust: Preheat your oven to 350°F. In a medium bowl, combine 2 cups flour and 1/2 cup brown sugar.   2. Make the Cheesecake Filling: In a large bowl, beat 3 packages softened cream cheese with 3/4 cup sugar at medium speed until smooth. Add 3 eggs one at a time and 1 1/2 teaspoons vanilla extract, mixing to combine. Pour this mixture over the warm crust evenly.
  3. Prepare the Apples: In a small bowl, mix together chopped 3 Granny Smith apples, 2 tablespoons sugar, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg. Spoon the apple mixture evenly over the cheesecake layer.
  4. Make the Streusel Topping: In a small bowl, thoroughly combine 1 cup brown sugar, 1 cup all-purpose flour, 1/2 cup quick cooking oats, and 1/2 cup softened butter using clean hands to achieve the proper crumbly texture; avoid using a food processor to keep oats intact. Sprinkle this topping evenly over the apples.
