  • 2 tablespoons Vegetable or Canola Oil
  • 3 pound Boneless Beef Chuck Roast

Seasoning:

  • 1 Jalapeno Pepper, diced
  • 3 cloves Garlic, peeled and diced
  • 1 1/2 cups chopped Red Onion
  • 1 teaspoon Kosher Salt
  • 1 tablespoon Brown Sugar
  • 1 1/2 teaspoons Chili Powder
  • 1 1/2 teaspoons Oregano
  • 1 1/2 teaspoons ground Cumin
  • 1 teaspoon Coriander
  • 1/4 teaspoon ground Cinnamon

Additional Ingredients:

  • 1 tablespoon All-Purpose Flour (gluten-free or regular)
  • Zest of 1 Orange
  • 1 15 ounce can Tomato Sauce

Instructions

  1. Brown the Roast: In a large skillet or Dutch oven, heat oil over medium-high heat. Brown the roast on all sides, then transfer it to a slow cooker.
  2. Prepare the Seasonings: In the same skillet, sauté jalapenos, garlic, and onions until softened. Add all the seasonings (except tomato sauce), stir well, then add the tomato sauce and cook briefly.
  3. Cook in the Slow Cooker: Pour the sauce over the roast in the slow cooker, ensuring it’s coated on all sides. Cover and cook on LOW for 8 hours.
  4. Rest and Serve: Allow the roast to rest before slicing. Strain any fat from the sauce, then serve with the sliced roast.

Notes

  • For a spicier kick, leave some of the jalapeno seeds in.
