- 3 pound Boneless Beef Chuck Roast
Seasoning:
- 1 Jalapeno Pepper, diced
- 3 cloves Garlic, peeled and diced
- 1 1/2 cups chopped Red Onion
- 1 teaspoon Kosher Salt
- 1 tablespoon Brown Sugar
- 1 1/2 teaspoons Chili Powder
- 1 1/2 teaspoons Oregano
- 1 1/2 teaspoons ground Cumin
- 1 teaspoon Coriander
- 1/4 teaspoon ground Cinnamon
Additional Ingredients:
- 1 tablespoon All-Purpose Flour (gluten-free or regular)
- Zest of 1 Orange
- 1 15 ounce can Tomato Sauce
Instructions
- Brown the Roast: In a large skillet or Dutch oven, heat oil over medium-high heat. Brown the roast on all sides, then transfer it to a slow cooker.
- Prepare the Seasonings: In the same skillet, sauté jalapenos, garlic, and onions until softened. Add all the seasonings (except tomato sauce), stir well, then add the tomato sauce and cook briefly.
- Cook in the Slow Cooker: Pour the sauce over the roast in the slow cooker, ensuring it’s coated on all sides. Cover and cook on LOW for 8 hours.
- Rest and Serve: Allow the roast to rest before slicing. Strain any fat from the sauce, then serve with the sliced roast.
