Description

These Carrot Cake Energy Bites are a delicious and healthy snack that combines the natural sweetness of carrots and dates with the warmth of cinnamon, nutmeg, and ginger. Packed with pecans, oats, and peanut butter, these no-bake energy balls are perfect for a quick on-the-go boost or a nutritious treat at any time of day.

  • 1/2 cup carrots, chopped
  • 1/4 cup soft pitted dates
  • 1/2 cup pecans
  • 2 tbsp desiccated coconut
  • 1/2 cup oats

  • 1/2 tsp nutmeg
  • 1/4 tsp ginger powder
  • 3 tbsp crunchy peanut butter
  • 1 tsp vanilla bean paste or vanilla extract
  • 1/2 tbsp maple syrup


Instructions

  1. Process Carrots and Dates: Add chopped carrots and soft pitted dates into a food processor. Pulse for about 1 minute until the carrots and dates are finely chopped into small pieces.
  2. Add Remaining Ingredients: Add pecans, desiccated coconut, oats, cinnamon, nutmeg, ginger powder, crunchy peanut butter, vanilla bean paste (or extract), and maple syrup to the food processor. Pulse repeatedly until all ingredients combine and form a sticky, cohesive mixture. Pause occasionally to scrape down the sides and push the mixture towards the blades.
  3. Shape Energy Bites: Transfer the mixture to a bowl. Using a small cookie scoop (approximately 1 tablespoon), portion out the mixture. Roll each scoop between your hands to form smooth, small energy bites.
  4. Serve or Store: Enjoy these energy bites immediately or store them in an airtight container in the refrigerator for later consumption to keep them fresh and firm.

  • You can substitute pecans with walnuts or almonds based on preference.
  • Maple syrup can be replaced with honey for variation.
