Instructions

  1. Prepare Special Sauce: In a bowl, combine the mayonnaise, ketchup, minced dill pickles, minced white onion, and white vinegar. Stir well until the sauce is fully mixed. This sauce can be prepared several days ahead and refrigerated for enhanced flavors.
  2. Mix Ground Beef: Add the browned and drained ground beef to a bowl. Season with salt and pepper, then add ketchup and mustard, using a ratio of roughly two parts ketchup to one part mustard. Mix until the beef mixture is evenly coated and slightly saucy, avoiding dryness.
  3. Heat Skillet: Preheat a flat griddle or skillet over medium heat. Lightly spray with nonstick cooking spray to prevent sticking.
  4. Assemble Quesadilla: Place one tortilla onto the heated skillet. Sprinkle a thin layer of shredded cheddar cheese over the tortilla to help bind the fillings. Evenly spread the ground beef mixture on top of the cheese layer, followed by your choice of toppings such as chopped onions, pickles, and bacon. Add another thin layer of cheddar cheese on top of the toppings to help seal the quesadilla. Finally, place a second tortilla on top to complete the quesadilla.
