Description

A delicious and hearty Chicken Bacon Ranch Potato Skillet featuring crispy air-fried potatoes, savory seasoned chicken, smoky bacon, and melted mozzarella cheese all brought together with a drizzle of creamy ranch dressing. Perfect for a comforting weeknight dinner.

Ingredients

Scale

Potatoes

  • 4 medium/large potatoes, washed and cubed
  • Olive oil (about 2-3 tbsp)
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)
  • Paprika (to taste)

Chicken and Seasoning

  • 2 chicken breasts, cut into cubes
  • 1 tbsp dry ranch seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika

Bacon and Cheese

  • 6 strips of bacon, chopped
  • 1 cup shredded mozzarella cheese

Topping

  • Ranch dressing, for serving

Instructions

  1. Prepare Potatoes: Wash and cube the potatoes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until well coated.
  2. Air Fry Potatoes: Place the seasoned potatoes in an air fryer and cook at 400°F (204°C) for 20-25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
  3. Cook Bacon: While potatoes are cooking, chop the bacon strips and cook them in a skillet over medium-high heat until crispy. Remove the bacon from the skillet and leave about 2 tablespoons of bacon grease in the pan.
  4. Cook Chicken: Add the cubed chicken to the skillet with bacon grease. Season with salt, pepper, paprika, and dry ranch seasoning. Cook the chicken until fully cooked through, then remove the pan from heat.
  5. Combine Ingredients: Add the cooked air-fried potatoes to the skillet with the chicken. Stir everything well to combine.
  6. Add Cheese and Bacon: Sprinkle shredded mozzarella cheese over the skillet contents and top with cooked bacon pieces.
  7. Melt Cheese: Place the skillet under the broiler in the oven for a few minutes until the cheese melts and bubbles. Alternatively, cover the skillet with a lid and let it sit on the stove to melt the cheese.
  8. Serve: Plate the skillet mixture and top each serving with ranch dressing. Enjoy your flavorful Chicken Bacon Ranch Potato Skillet!

Notes

  • Adjust seasoning amounts to your preference, especially for the potato coating.
  • Make sure chicken is fully cooked to an internal temperature of 165°F (74°C).
  • Using the broiler melts the cheese quickly; monitor closely to avoid burning.
  • Leftovers can be refrigerated and reheated on the stovetop or in the microwave.
  • This dish pairs well with a fresh green salad for a balanced meal.
