Ingredients for Chipotle Mayo:
- 6 chipotle peppers in adobo sauce, chopped
- 1/4 cup mayo
Additional Ingredients:
- 2 flat loaves of focaccia bread (garlic herb preferred)
- 6 oz shredded rotisserie chicken
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup Peppadew peppers (or sweet & hot cherry peppers), chopped
- 4 oz sliced gouda cheese
- 2 tablespoons water
Instructions
- Prepare Chipotle Mayo: In a small bowl, combine the chopped chipotle peppers in adobo with mayo. Stir well and set aside.
- Assemble the Sandwiches: Slice the focaccia loaves into 8 square pieces. Spread chipotle mayo on each slice. On half of the slices, layer cheese, avocado, chicken, cilantro, and peppers. Top with the remaining slices.
- Cook the Sandwiches: In a skillet over medium-high heat, cook the sandwiches for 2-3 minutes on each side. Add water, cover, and steam for 1 minute. Uncover and serve.
Notes
- Brush avocado slices with lemon juice to prevent browning if making ahead.
- Adjust salt and seasonings in the chipotle sauce according to taste preferences.
