Ingredients
Scale
Ingredients
- 150g dark chocolate
- 4 tbsp cashew butter
- 25g popped quinoa
Instructions
- Melt the chocolate: Break the dark chocolate into small pieces and place them in a heat-proof bowl. Microwave on high in short bursts, stirring every few seconds to prevent burning, until the chocolate is completely melted and smooth.
- Add cashew butter: Stir in the cashew butter into the melted chocolate until the mixture is evenly combined and creamy.
- Incorporate popped quinoa: Gently fold the popped quinoa into the chocolate and cashew butter mixture, ensuring it is evenly distributed without breaking the quinoa puffiness.
- Shape the bites: Spoon the mixture onto a baking sheet or chopping board lined with parchment paper and flatten into small, flat disks or bite-sized shapes.
- Refrigerate: Place the tray in the refrigerator for at least 30 minutes to allow the bites to set and firm up before serving.
Notes
- Use dark chocolate with at least 70% cocoa for a richer flavor and health benefits.
- You can substitute cashew butter with almond or peanut butter if desired.
- Popped quinoa provides a delightful crunch; avoid using uncooked quinoa.
- Store the bites in an airtight container in the refrigerator for up to a week.
- These bites are a great gluten-free and vegetarian snack option.
