Description

Fruit and Yogurt Mixture

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup semi sweet chocolate chips
  • 2 tbsp coconut oil


Instructions

  1. Prepare the yogurt mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until all ingredients are well blended.
  2. Form clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture per cluster and place them on a parchment paper-lined baking sheet or large plate. You should be able to make about 10 clusters.
  3. Freeze the clusters: Place the baking sheet with the yogurt clusters in the freezer and allow them to freeze completely, which takes about 1-2 hours, until they are solid.
  4. Melt the chocolate coating: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  5. Dip the frozen clusters: Remove the frozen yogurt clusters from the freezer and carefully dip each one into the melted chocolate. Use a spoon to help coat each cluster thoroughly. Place the coated clusters back on the parchment-lined sheet. Optionally, sprinkle with sea salt.
  6. Re-freeze for finishing: Return the chocolate-coated clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to firm up slightly. Once set, enjoy your chilled chocolate strawberry yogurt clusters!
