Guacamole Base
- 6 ripe avocados
- 2 cans RO*TEL® Original Diced Tomatoes and Green Chilies (10 ounces each), drained well
- 2 Tablespoons lime juice
- ½ cup red onion, chopped
- 3 cloves garlic, minced
- ½ teaspoon ground cumin
- ½ cup fresh cilantro, finely chopped
- Salt, to taste
Garnish and Serving
- Cherry tomatoes, for garnish
- Cilantro leaves, for garnish
- Tortilla chips or fresh vegetables, for serving
Instructions
- Prepare Avocados: Pit and peel the 6 ripe avocados and place them in a large bowl. Coarsely mash them with a fork or potato masher until you reach your desired consistency.
- Mix Ingredients: Add the drained RO*TEL diced tomatoes and green chilies, 2 tablespoons of lime juice, ½ cup chopped red onion, 3 cloves minced garlic, ½ teaspoon ground cumin, and ½ cup finely chopped fresh cilantro to the mashed avocados. Mix everything well to combine all the flavors.
- Season: Taste the guacamole mixture and add salt as needed to enhance the flavor. Stir again.
- Form the Wreath: Place a small bowl in the center of a larger shallow bowl to create a mold. Spoon the guacamole into the larger bowl around the small bowl, shaping it into a ring or wreath.
- Remove Mold and Garnish: Carefully lift and remove the small bowl from the center, leaving a guacamole wreath. Garnish the wreath with cherry tomatoes and cilantro leaves evenly spaced around the ring to create a festive look.
