  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg

For Rolling:

  • 1/4 cup granulated sugar
  • 1/4 cup powdered sugar

Instructions

  1. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Set aside.
  2. Dissolve the Coffee: In a small bowl, mix instant coffee granules with vanilla extract until dissolved.
  3. Cream the Butter & Sugar: In a large bowl, beat melted butter and brown sugar until smooth. Mix in the egg and coffee mixture until fully combined.
  4. Combine Wet & Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be soft and slightly sticky.
  5. Chill the Dough: Cover the dough and refrigerate for 30 minutes to firm up.
  6. Roll & Coat the Dough: Scoop the chilled dough into small balls. Roll each one in granulated sugar first, then in powdered sugar for the crinkle effect.
  7. Bake the Cookies: Place the coated dough balls on a parchment-lined baking sheet, spacing them apart. Bake at 350°F (175°C) for 10-12 minutes until crinkled and set.
