Bean Mixture:
- 15 oz can black beans, rinsed and drained
- 15 oz can black-eyed peas or white beans, rinsed and drained
- 15 oz can white shoepeg or sweet corn, drained
Vegetables:
- 3-4 diced tomatoes (about 1 cup)
- 1 red bell pepper, chopped
- 2 avocados, seeded and diced
- 1/2 cup chopped green onion
- 3/4 cup cilantro
Dressing:
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1-2 tsp granulated sugar (optional)
- 1 tsp minced garlic
- 3/4 tsp ground cumin
- 3/4 tsp Kosher salt
Instructions
- Combine beans: Mix canned corn, black beans, and black-eyed peas in a bowl.
- Dice veggies and herbs: Chop green onion, red bell pepper, avocados, and tomatoes. Finely chop cilantro and mix all vegetables together.
- Add lime: Season with salt and lime juice to taste, gently stir to combine.
- Prepare dressing: Whisk together olive oil, red wine vinegar, sugar, garlic, cumin, and salt. Pour half of the dressing over the bean mixture and stir. Adjust dressing to taste.
- Serve: Enjoy with tortilla chips, as a salad topping, or as a filling for tortillas. Store leftovers in an airtight container for up to 2-3 days.
Notes
- For best results, add avocado just before serving to prevent browning.
