For the avocado sauce:

  • 1 large Ripe Avocado
  • 1/4 cup Fresh Basil Leaves
  • 1/4 cup Fresh Parsley Leaves
  • 2 Scallions (only green part)
  • 2 large Garlic cloves (or 4 small)
  • 2 tablespoons Lemon Juice
  • 1/4 cup Parmesan Cheese (grated plus more for serving)
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 teaspoon Sea Salt (or to taste)
  • 1/4 teaspoon Freshly Ground Pepper (or to taste)

For serving (optional):

  • Rocket Leaves (as needed)
  • Toasted Sourdough
  • Roasted Cherry Tomatoes (as needed)

Instructions

  1. Cook the pasta: In a large pot of salted water, cook the pasta until al dente. Reserve some pasta water and set it aside. Drain the pasta well.
  2. Make the Avocado Sauce: Blend avocado, basil, parsley, scallions, garlic, parmesan, olive oil, salt, and pepper until smooth. Adjust seasoning as needed.
  3. Assemble the Pasta: Toss the pasta with avocado sauce, chicken, red pepper flakes, and reserved pasta water. Serve with additional parmesan, red pepper flakes, and optional sides.

Notes

  • Leftovers can be stored in the fridge for up to 2 days.
  • Avoid freezing as the avocado sauce may not maintain its consistency.
