For the pasta:
- 10 oz Uncooked Pasta (of choice)
- 2 cups Cooked Chicken Breasts (diced or shredded)
- 1/4 teaspoon Red Pepper Flakes (optional)
For the avocado sauce:
- 1 large Ripe Avocado
- 1/4 cup Fresh Basil Leaves
- 1/4 cup Fresh Parsley Leaves
- 2 Scallions (only green part)
- 2 large Garlic cloves (or 4 small)
- 2 tablespoons Lemon Juice
- 1/4 cup Parmesan Cheese (grated plus more for serving)
- 1/4 cup Extra Virgin Olive Oil
- 1/4 teaspoon Sea Salt (or to taste)
- 1/4 teaspoon Freshly Ground Pepper (or to taste)
For serving (optional):
- Rocket Leaves (as needed)
- Toasted Sourdough
- Roasted Cherry Tomatoes (as needed)
Instructions
- Cook the pasta: In a large pot of salted water, cook the pasta until al dente. Reserve some pasta water and set it aside. Drain the pasta well.
- Make the Avocado Sauce: Blend avocado, basil, parsley, scallions, garlic, parmesan, olive oil, salt, and pepper until smooth. Adjust seasoning as needed.
- Assemble the Pasta: Toss the pasta with avocado sauce, chicken, red pepper flakes, and reserved pasta water. Serve with additional parmesan, red pepper flakes, and optional sides.
Notes
- Leftovers can be stored in the fridge for up to 2 days.
- Avoid freezing as the avocado sauce may not maintain its consistency.
- For reheating, enjoy the pasta cold or gently warm in short bursts in the microwave with a splash of water or milk if needed.
