Green Beans:
- 2 pounds fresh green beans, washed and trimmed
Mushroom Sauce:
- 1/2 cup salted butter
- 8 ounces baby bella mushrooms, chopped
- 2 tablespoons all-purpose flour
- 1 1/2 cups heavy cream OR half & half OR whole milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 2 cups freshly grated parmesan cheese
Topping:
- 2 cups French fried onions
Instructions
- Preheat oven: to 375° F.
- Prepare green beans: Spread green beans in a 9×13 inch baking pan.
- Make mushroom sauce: Melt butter in a skillet, add mushrooms, salt, and pepper. Sauté, then stir in flour. Add cream, stir until bubbles form. Stir in cheese until melted.
- Combine: Pour sauce over green beans, top with fried onions.
- Bake: Uncovered for 45 minutes. Cover with foil and bake 15 more minutes if beans are too crisp.
Notes
- Make it in advance: Prepare casserole up to combining beans with sauce, cover, and refrigerate. Top with onions before baking.
- Storing & reheating: Store covered in the refrigerator for up to 5 days. Reheat at 350° for 15 minutes.
