Instructions
- Prepare the cucumber: Trim off the two ends of the cucumber and then halve it lengthwise. Slice it into ¼-inch thick half rounds to create evenly sized pieces for the salad.
- Combine vegetables: In a medium bowl, place the sliced cucumber, halved tomatoes, and thinly sliced red onion to form the base of the salad.
- Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, honey, salt, and black pepper until fully emulsified to create a balanced and flavorful dressing.
- Toss the salad: Pour the prepared dressing over the vegetables and toss gently to coat everything evenly without bruising the produce.
- Add fresh herbs and serve: Gently stir in the fresh chopped herbs if using. Serve the salad immediately for best texture or chill in the refrigerator for an hour or two to enhance flavor melding before serving.
Notes
- You can use whole ripe tomatoes and chop them if grape or cherry tomatoes are unavailable.
