Ingredients for Chicken Jalfrezi:

  • 500g chicken breast, boneless and skinless, cut into cubes
  • 1 medium green bell pepper, cut into cubes
  • 1 medium red bell pepper, cut into cubes
  • 1 medium onion, cut into cubes
  • 1 tbsp butter
  • 3 tbsp sunflower oil
  • 1 large onion, finely chopped
  • 1 tbsp garlic, finely chopped
  • 1 tbsp ginger, finely chopped
  • 1 large tomato, finely chopped
  • 2 tbsp tomato ketchup
  • 2 fresh green chilies, slit
  • 1/4 cup fresh coriander, finely chopped
  • 1/2 cup warm water
  • Dry Spices:

    • 1 tsp ground coriander
    • 1 tsp ground cumin
    • 1/4 tsp ground black pepper
    • 1 tsp turmeric powder
    • 1 tsp red chili powder
    • 1/2 tsp garam masala
    • 1/2 tsp kasuri methi (dried fenugreek leaves, optional)

Instructions

  1. Saute Bell Peppers: Heat 1 tsp oil in a pot, saute green and red bell peppers with onion cubes. Set aside.
  2. Cook Chicken: In the same pot, heat 1 tbsp oil, saute chicken with spices until cooked. Set aside.
  3. Prepare Sauce: Heat remaining oil and butter, saute onion, garlic, ginger. Add dry spices, then tomatoes and ketchup.
  4. Finish Dish: Add chicken, water, chilies, sauteed veggies. Simmer until chicken is tender. Finish with garam masala, coriander, kasuri methi.
