English Muffin Breakfast Pizza:
- 1 Package of English Muffins
- 8 Eggs
- 1 lb Breakfast Sausage
- 8 oz Mild Cheddar Cheese, thin sliced
Sawmill Gravy:
- 2 cups Milk
- 1/4 cup sausage drippings (add butter if you don’t have enough drippings)
- 1/4 cup flour
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon pepper (or to taste)
Instructions
- Cook the meat: Cook breakfast sausage in a cast iron pan until well done. Remove from pan and reserve ¼ cup of fat.
- Make the gravy: In the same skillet, add flour to the drippings. Cook and stir over medium heat until golden. Slowly add milk, stirring constantly. Cook until the gravy thickens.
- Prepare the English Muffins: Lightly toast the English Muffins in a toaster.
- Scramble the eggs: In a non-stick skillet, scramble the eggs with a dash of milk for fluffiness.
- Assemble the pizzas: Preheat the oven broiler. Top the toasted English Muffins with sawmill gravy, scrambled eggs, cheese slices, and sausage.
