Ingredients

Scale

Appetizer Components

  • 12 rice crackers
  • 3 chives
  • 4 oz. herbed goat cheese
  • 2 oz. curly parsley leaves
  • 12 pink peppercorns

Instructions

  1. Cut the Goat Cheese Squares: Place a 1½-inch square cookie cutter in the center of a rice cracker. Spoon about 1½ teaspoons of herbed goat cheese into the cookie cutter and evenly fill it to the sides.
  2. Remove Cookie Cutter Carefully: Use a small spoon or a finger wearing a plastic glove to gently press the cheese and carefully lift the cookie cutter straight up, leaving a neat goat cheese square on the cracker.
  3. Add Chive Ribbon: Use kitchen scissors to cut a chive into two pieces, each the length of the goat cheese square. Lay one piece down the center of the cheese, then cut one of these pieces in half and place the halves on the sides to form a cross, mimicking a ribbon on a gift.
  4. Attach Pink Peppercorn: Dab a tiny bit of goat cheese on a pink peppercorn to help it stick, then place the pink peppercorn in the center of the chive ribbon on the goat cheese square.
  5. Garnish with Parsley: Add two tiny curly parsley leaves on each side of the cheese square. Use a toothpick or cocktail pin to gently press them into the goat cheese so they stay securely in place.

Notes

  • Rice crackers start to become stale about an hour after refrigeration once topped with cheese, though they remain tasty during that time.
  • For making these appetizers well in advance, consider using more dense crackers like Ritz or other wheat-based buttery crackers that stay crisp longer.
  • If pink peppercorns are hard to find locally, check online retailers like Amazon or specialty spice shops.
