Description

These Frankenstein Halloween Rice Krispie Treats are a fun and festive twist on the classic snack, perfect for Halloween parties and celebrations. Made by combining crispy rice cereal with marshmallows, then decorated with green and black candy melts, royal icing eyes, and sprinkles, these treats are both delicious and visually spooky.

Ingredients

Scale

Rice Krispie Treats

  • 6 cups rice krispie cereal
  • 10 oz bag mini marshmallows
  • 4 tbsp unsalted butter

Decorations

  • 10 oz green candy melts
  • 3 oz black candy melts
  • Royal icing eyes
  • Black jimmies sprinkles

Instructions

  1. Prepare the dish: Butter a 9″ x 13″ casserole dish to prevent the rice krispie mixture from sticking later on.
  2. Melt butter and marshmallows: In a large pot over low-medium heat, melt the unsalted butter. Add the mini marshmallows and stir continuously until fully melted and smooth, ensuring not to overcook.
  3. Mix in cereal: Pour in the rice krispie cereal and gently stir with a spatula until all the cereal is evenly coated with the melted marshmallow mixture.
  4. Shape the treats: Spoon the mixture into the prepared casserole dish and press it down firmly until it fills the dish and the top is evenly flat.
  5. Let set: Allow the rice krispie treats to cool and set in the dish for 30 minutes at room temperature.
  6. Cut into pieces: Once cooled, remove from the dish and cut into rectangles of various sizes, resembling Frankenstein shapes.
  7. Melt green candy melts: Place a bowl over a small pot of boiling water (double boiler method) and add the green candy melts. Stir until fully melted. If the melts are too thick for dipping, add a teaspoon of vegetable shortening to thin.
  8. Dip treats: Dip the top of each rice krispie treat into the melted green candy melts, then immediately dip into the black jimmies sprinkles for texture and decoration.
  9. Add eyes: Place two royal icing eyes on each treat while the coating is still wet to ensure they stick.
  10. Melt black candy melts: In a microwave-safe bowl, melt the black candy melts using 10-15 second increments, stirring in between to avoid burning.
  11. Pipe stitches: Pour the melted black candy into a piping bag and pipe Frankenstein-style stitches onto the treats.
  12. Set completely: Allow the decorated treats to set completely at room temperature before packaging or serving.

Notes

  • Cook marshmallows and butter over medium heat and remove from heat immediately once melted to prevent hard, overcooked bars.
  • Keep kitchen utensils dry while melting chocolate to avoid chocolate seizing.
  • You can substitute candy melts with white chocolate tinted green and dark chocolate tinted black using gel food colorings.
  • If you don’t have a double boiler, melt chocolate in the microwave in 10-second increments to prevent burning.
  • To thin thick melted chocolate, add a small amount of vegetable shortening gradually until desired consistency is reached.
  • Store rice krispie treats in an airtight container at room temperature; best consumed within three days.
