Fresh Peach Salsa:
- 1 pound (450g) fresh ripe peaches, diced
- 1 large roma tomato, diced
- 1/4 cup (30g) diced red onion
- 1/2 jalapeno, minced (seeds and membrane removed)
- 2 tablespoons minced cilantro
- juice of 1 lime
- salt and pepper to taste
