Instructions
- Cook Potatoes: Heat a large cast iron skillet over medium-high heat and add 1 tablespoon olive oil. Add the sliced Yukon gold potatoes, garlic powder, salt, and ground black pepper. Cook for about 5 minutes before stirring, then continue cooking for another 10-15 minutes, stirring occasionally, until the potatoes are fork tender. Remove the potatoes from the skillet and set aside on a plate.
- Sear Steak Bites: Turn the heat up to high. Add the sirloin steak pieces to the skillet and season with salt and ground black pepper. Let the steak sear without stirring for 1 minute to develop a golden crust, then stir and continue cooking until the steak bites are golden brown and cooked through, about 4-5 minutes total.
- Add Aromatics and Combine: Add the unsalted butter, minced garlic, chopped thyme, rosemary, oregano, and the cooked potatoes back into the skillet. Cook together for 2-3 minutes, stirring frequently, to allow the flavors to meld and the garlic to become fragrant.
- Serve: Remove from heat and serve the garlic steak bites and herb-seasoned potatoes immediately while hot for the best flavor and texture.
