Description

For Mashing:

  • 4 tablespoons (56g) unsalted butter (divided)
  • 1/3 cup (80g) heavy cream
  • 1/4 teaspoon (0.5g) nutmeg
  • Salt and pepper (to taste)
  • 1/3 cup (33.33g) Parmesan
  • 4 large egg yolks

Instructions

  1. Prepare Potatoes: Peel and cut potatoes into chunks. Boil until fork-tender. Drain and dry them.
  2. Mix Ingredients: In a bowl, combine potatoes with butter, cream, nutmeg, Parmesan, pepper, and salt. Mash until smooth. Add eggs and mix.
  3. Preheat Oven: Preheat to 425°F and line a baking sheet with parchment.
  4. Pipe Potatoes: Transfer mashed potatoes to a pastry bag fitted with a star tip. Pipe onto the baking sheet in spirals.
  5. Bake: Brush with butter and bake for 20-25 minutes until golden.
