Potatoes:
- 2 1/2 pounds (1133.98g) potatoes (Yukon or Russet)
For Mashing:
- 4 tablespoons (56g) unsalted butter (divided)
- 1/3 cup (80g) heavy cream
- 1/4 teaspoon (0.5g) nutmeg
- Salt and pepper (to taste)
- 1/3 cup (33.33g) Parmesan
- 4 large egg yolks
Instructions
- Prepare Potatoes: Peel and cut potatoes into chunks. Boil until fork-tender. Drain and dry them.
- Mix Ingredients: In a bowl, combine potatoes with butter, cream, nutmeg, Parmesan, pepper, and salt. Mash until smooth. Add eggs and mix.
- Preheat Oven: Preheat to 425°F and line a baking sheet with parchment.
- Pipe Potatoes: Transfer mashed potatoes to a pastry bag fitted with a star tip. Pipe onto the baking sheet in spirals.
- Bake: Brush with butter and bake for 20-25 minutes until golden.
- Serve: Remove from oven and serve hot.
