Cobbler Batter
- 1 cup all-purpose flour

- 2 lbs peaches (fresh, thawed frozen, or canned, drained)
- 1 tsp ground cinnamon
- 1/4 cup finishing sugar (or substitute with regular sugar)
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F. Lightly coat an 11×7-inch baking pan with cooking spray to prevent sticking.
- Make the batter: In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and milk until well combined. Add the melted butter and vanilla extract and whisk until you achieve a smooth batter.
- Arrange peaches: Scatter the peach slices evenly on the bottom of the prepared baking pan.
- Pour batter over peaches: Pour the batter evenly over the peaches, covering them completely.
- Add cinnamon and sugar topping: Sprinkle the ground cinnamon and finishing sugar evenly over the batter to create a flavorful, crunchy top layer.
- Bake: Place the pan in the preheated oven and bake for 45 minutes, or until the cobbler turns golden brown and is cooked through.

Notes
- For fresh peaches, to easily peel them, make a small “+” cut at the bottom of each peach and blanch in boiling water for 30 seconds. Then, transfer to an ice-water bath to cool. The skin will peel off easily without cooking the flesh.
- Finishing sugar is a crystallized sugar that adds a crunchy topping, but you can substitute it with regular sugar if unavailable.
- You can use thawed frozen or canned peaches when fresh peaches are not in season; just be sure to drain canned peaches well.
