Tahini Mixture:
- 1/4 cup tahini
- 1/4 cup fresh lemon juice (about 1 large lemon’s worth)
- 2 tablespoons olive oil, plus more for serving
Herb Mixture:
- 1/2 cup roughly chopped fresh parsley
- 1/4 cup roughly chopped fresh tarragon or basil
- 2 to 3 tablespoons roughly chopped fresh chives or green onion
- 1 large garlic clove, roughly chopped
- 1/2 teaspoon salt, more to taste
Remaining Ingredients:
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 to 2 tablespoons water, optional
- Extra olive oil and herbs for garnish
Instructions
- Tahini Mixture: Combine tahini and lemon juice in a food processor or blender. Process for about 1 ½ minutes, scraping down the sides as needed.
- Herb Mixture: Add olive oil, parsley, tarragon, chives, garlic, and salt to the tahini mixture. Process for about 1 minute, scraping down the sides as needed.
- Chickpeas: Add half of the chickpeas and process for 1 minute. Scrape down the bowl, then add the rest of the chickpeas and process until smooth, about 1 to 2 minutes.
- Adjust Consistency: If needed, drizzle in water while processing for desired consistency.
- Serve: Transfer hummus to a serving bowl. Drizzle with olive oil and sprinkle with herbs.
- Store: Refrigerate in an airtight container for up to a week.
