Main Ingredients:
- 1 pound Italian sausage
- 4 strips bacon
Additional Ingredients:
- 1/2 medium onion, chopped
- 3 cloves garlic, minced
- 4 (14 ounce) cans white beans (cannellini), drained
- 4 cups chicken broth
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon dried rosemary
- 2 small carrots, peeled & chopped small
- 2 cups fresh baby spinach, packed
- Salt & pepper to taste
Instructions
- Cook Sausage and Bacon: Add the sausage meat and bacon to a large soup pot; cook until crispy. Transfer to a plate.
- Sauté Onion and Garlic: Cook onion until softened; add garlic and cook briefly.
- Add Remaining Ingredients: Stir in beans, broth, Italian seasoning, and rosemary. Blend the soup.
- Finish Soup: Return sausage and bacon to the pot, add carrots, and simmer until carrots are tender. Stir in spinach and season with salt and pepper.
Notes
- For the sausage, use around 1 pound/16 oz. and remove from casings if necessary.
- Consider using low-sodium chicken broth due to the saltiness of bacon and sausage.
