Description

This hearty and flavorful Italian sausage white bean soup is the perfect comfort food for a cozy night in. Packed with protein-rich white beans, savory Italian sausage, and aromatic herbs, this soup is sure to become a family favorite.

Main Ingredients:

  • 1 pound Italian sausage
  • 4 strips bacon

Additional Ingredients:

  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 (14 ounce) cans white beans (cannellini), drained
  • 4 cups chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon dried rosemary
  • 2 small carrots, peeled & chopped small
  • 2 cups fresh baby spinach, packed
  • Salt & pepper to taste

Instructions

  1. Cook Sausage and Bacon: Add the sausage meat and bacon to a large soup pot; cook until crispy. Transfer to a plate.
  2. Sauté Onion and Garlic: Cook onion until softened; add garlic and cook briefly.
  3. Add Remaining Ingredients: Stir in beans, broth, Italian seasoning, and rosemary. Blend the soup.
  4. Finish Soup: Return sausage and bacon to the pot, add carrots, and simmer until carrots are tender. Stir in spinach and season with salt and pepper.

Notes

  • For the sausage, use around 1 pound/16 oz. and remove from casings if necessary.
  • Consider using low-sodium chicken broth due to the saltiness of bacon and sausage.
