  • 1 lb fresh strawberries, chopped
  • 1 lb fresh pineapple, chopped
  • 12 oz fresh blueberries
  • 12 oz red grapes, sliced into halves
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges, peeled and sectioned (or 1 (15 oz) can mandarin oranges, drained)
  • 2 bananas, sliced (optional)

Honey Lime Dressing

  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice

Instructions

  1. Prepare the fruit: Add all of the prepared fresh fruit—strawberries, pineapple, blueberries, grapes, kiwis, mandarins, and optional bananas—into a large mixing bowl.
  2. Make the dressing: In a small mixing bowl, whisk together the honey, lime zest, and fresh lime juice until well combined, creating a smooth dressing.
  3. Toss the salad: Pour the honey lime dressing over the fruit and gently toss to evenly coat all the pieces with the dressing.
  4. Serve: Serve the salad immediately for the best freshness and taste. Optionally, refrigerate the fruit and dressing separately and combine just before serving if prepping in advance.

Notes

  • Fresh mandarins are preferred for optimal texture and flavor, but a well-drained 15 oz can of mandarin oranges in juice or light syrup can be used as a substitute.
  • Fruit (except bananas) can be chopped up to one day in advance. Store chopped fruit and dressing separately in the refrigerator and toss right before serving to maintain freshness.
