Instructions
- Prepare the sauce: Combine honey, ketchup, sweet chili sauce, sesame oil, and soy sauce in a bowl and set aside.

- Coat the chicken: Add potato starch to the seasoned chicken, cover with a lid, and shake well to evenly coat all pieces.
- Heat the oil: Heat ¼ cup of avocado oil in a skillet over medium-high heat for shallow frying.
- Fry the chicken: Fry the chicken in batches to avoid overcrowding the skillet. Cook until golden and cooked through, then remove and drain on paper towels.
- Reduce oil: Remove remaining oil from the skillet using a paper towel, leaving a thin layer for sautéing.
- Finish the dish: Return the fried chicken to the skillet, pour in the prepared sauce, and sauté together for 2-4 minutes, stirring frequently until the sauce thickens and caramelizes, coating the chicken evenly.
