Bread Starter
- 75 g all-purpose flour
- 0.5 teaspoon diastatic malt powder
- 3 g active yeast
- 60 ml lukewarm water
Dough
- 600 g all-purpose flour
- 40 g butter
- 17 g active yeast
- 50 g white granulated sugar
- 15 g kosher salt
- 15 g diastic malt powder
- 340 ml lukewarm water
Bread Topping
- 1/2 cup shredded Monterey Jack cheese
- 2 tablespoons freshly grated Parmesan cheese
- 3 tablespoons Italian seasoning
- 1 teaspoon garlic powder
- 1 tablespoon melted butter
Instructions
- Bread Starter – Mix all the dry ingredients for the bread starter and add water. Cover and let sit for 4-6 hours.
- The Dough – In a stand mixer, combine all dough ingredients with starter. Knead for 8 minutes. Let rest for 30 minutes, fold a few times, then rest for 10 minutes. Repeat 2 more times.
- Baking and Toppings – Divide dough, shape into loaves, coat with butter and herb-cheese mix. Let rest, bake at 350°F for 25-30 minutes. Broil for 1-2 minutes. Cool before serving.
