Celebrate Halloween with these fun and festive Jack o Lantern Quesadillas, featuring warm, melty Colby Jack cheese sandwiched between pumpkin-shaped tortillas carved with spooky faces.   • 10 – 8 inch flour tortillas
  • 2 cups shredded Colby Jack cheese
  • 4 inch pumpkin cookie cutter


Instructions

  1. Cut Pumpkin Shapes: Use a 4 inch pumpkin cookie cutter to cut 2 pumpkin shapes from each tortilla. Alternatively, you can cut them out by hand with a sharp knife or kitchen scissors. Set the cut shapes aside.
  2. Carve Faces: Using a sharp knife and cutting board, carefully carve jack o lantern faces into half of the pumpkin-shaped tortilla pieces. These will be the top layers with the spooky designs.
  3. Assemble Quesadilla Base: Heat a large skillet over medium heat. Place one of the uncut pumpkin shaped tortillas into the skillet as the bottom layer.
  4. Add Cheese: Evenly sprinkle shredded Colby Jack cheese over the uncut pumpkin tortilla while it’s warming in the skillet, allowing the cheese to begin melting.
  5. Top with Carved Pumpkin: Place one of the carved pumpkin face tortillas face down on top of the cheese. Make sure the pumpkin stem is oriented opposite to the stem on the bottom tortilla for a pleasing look when flipped.
  6. Cook and Flip: Once the cheese starts to melt and hold the tortillas together, carefully flip the entire pumpkin face quesadilla over so the carved pumpkin side is now on top and the cheese is between the tortilla layers. Cook for an additional 1-2 minutes until golden and fully melted.
  7. Repeat: Repeat the assembly and cooking process for the remaining pumpkin quesadillas.
  8. Serve: Serve the Jack o Lantern Quesadillas immediately with your favorite quesadilla dipping sauce or salsa for a delicious and festive treat.

  • You can substitute Colby Jack cheese with any melty cheese of your choice such as cheddar or Monterey Jack.
