  • 1 tsp Dijon mustard
  • 2 tbsp extra virgin olive oil
  • Juice and zest of 1 medium lemon
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, crushed
  • 1/2 tsp dry oregano
  • 1/2 tsp dry thyme
  • 1/2 tsp dry basil
  • 2 tsp maple syrup or agave
  • Salt

Instructions

  1. To a large mixing bowl, add the chickpeas, cucumbers, tomatoes, red onion, parsley, and mint. Sprinkle with a pinch of salt.
  2. In a separate jar, combine the oil, mustard, apple cider vinegar, garlic, oregano, thyme, basil, maple syrup, and salt. Mix well and pour over the chickpea mixture.
  3. Toss the chickpea salad until well coated with the dressing. Cover and refrigerate for up to an hour, stirring occasionally.
  4. When ready to serve, place a wrap or pita on a plate, spread with your favorite spread, top with the chickpea salad, and serve.
