Tea Base:
- 2 cups Water
- 4 English Breakfast tea bags
- 4 Peach tea bags
- 1/3 cup Granulated Sugar
Additional Ingredients:
- 1 Mango
- 1 liter Soda Water, refrigerated
- pinch Sea salt
- 1/2–1 Lemons, juiced, plus wedges for garnish
- A few dashes Peach Bitters, if desired
Instructions
- Prepare Tea Base: Heat water and sugar in a saucepan until sugar dissolves. Boil, then remove from heat. Steep tea bags for 10 minutes, then remove.
- Prep Mango: Dice one half of the mango and smash the other half. Strain smashed mango into the tea.
- Combine Ingredients: Strain tea into a pitcher. Add soda water, sea salt, and lemon juice. Stir well.
- Serve: Chill with ice if serving immediately. Otherwise, store without ice.
- Final Touch: Fill glasses with ice and diced mango. Pour tea over and add peach bitters. Garnish with lemon wedges.
Notes
- Make ahead tips: Iced tea can be stored without ice for up to a week. Do not store with ice to avoid dilution.
- Leftover diced mango can be refrigerated for 3-5 days.
