Description

This Mediterranean Yogurt Cucumber Dip is a refreshing and flavorful dish perfect for a snack or appetizer. Creamy Greek yogurt combined with fresh cucumber, garlic, dill, and tangy feta cheese create a delightful dip that is enhanced with the addition of falafel crumbles, red onion, beets, and tomatoes.

Base of the Cucumber Dip:

  • 1 cup plain greek yogurt
  • 3 cloves garlic, diced
  • 1/2 lemon, juiced
  • 1 tbsp fresh dill

Additions:

  • 2-3 tbsp feta cheese
  • 1 cucumber, quartered
  • 2-3 falafels, crumbled
  • 1/2 red onion, diced
  • 2 baby beets (canned) diced or 2 tbsp diced canned beets
  • 1 tomato, diced with juices drained
  • 2 tbsp extra virgin olive oil

Optional garnish:

  • Za'atar seasoning

Instructions

  1. Base of the Cucumber Dip: In a large bowl, combine garlic, greek yogurt, lemon juice, and 1 tbsp of fresh dill. Slowly fold in the feta and half of the diced cucumber.
  2. Additions: Just before serving, add the falafel crumbles, remaining cucumber, red onion, beets, tomato, and remaining dill. Top with more feta cheese as desired and drizzle with olive oil.

Notes

  • Falafel can be purchased in the international foods aisle and prepared according to package instructions or baked at 400°F for 15-20 minutes.
  • Consider topping with za’atar seasoning for extra flavor.
  • Do not forget the olive oil; it is essential for the dish’s flavor.
