Description
This Middle-Eastern Fattoush Salad is a refreshing and flavorful dish that combines crispy grilled bread with a medley of fresh vegetables, herbs, and a tangy buttermilk dressing.

Grilled Bread:
- 1 Stale Naan or Turkish flatbread, grilled, large
Salad:
- 3 Ripe Tomatoes, large, diced into 1/4 inch
- 1 Thin English Cucumber or mini cucumbers, 1 large or 3 mini, diced into 1/4 inch
- 2–3 green onions, thinly sliced
- 25g / 1/4 cup flat leaf parsley, chopped
Dressing:
- 250ml / 1 cup buttermilk, or plain yogurt
- 1 tbsp dried mint
- 2 cloves garlic, crushed
- 3 tbsp lemon juice
- 2 tbsp white wine vinegar, or cider vinegar
- 2 tbsp olive oil
- 3/4 tsp black pepper
- 1 1/2 tsp salt
- 1 tsp sumac, orange Middle Eastern spice (lemon flavour)
Instructions
- Grill or toast your naan or flatbread. In a large bowl, combine diced cucumbers, tomatoes, sliced onions, crushed garlic, and chopped parsley.
- In a small bowl, make the dressing. Combine buttermilk, lemon juice, white wine vinegar, olive oil, dried mint. Pour the dressing over the vegetables, stir to combine, and season with salt and pepper.
- Assemble the salad. Sprinkle with sumac and let it sit for 10 minutes to blend flavors. Tear the bread into small pieces and mix into the salad.
