Description

These Monster Eyeball Sugar Cookies are a fun and festive treat perfect for Halloween or any spooky occasion. Soft sugar cookies studded with colorful sprinkles are rolled in bright colored sugar and topped with candy eyeballs to create an eye-catching and delicious cookie that kids and adults will love.

Cookie Dough

  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Butter and egg called for on cookie mix pouch (typically 1/2 cup butter, softened, and 1 large egg)
  • 1/4 cup Betty Crocker™ Spooky Sprinkles (from 1 container, 1.70 oz)

Decoration

  • 1 container (2.25 oz) Betty Crocker™ Black Sugar, Green Sugar or Orange Sugar (about 1/3 cup)
  • 1 package (0.88 oz) Betty Crocker™ Dessert Decorations Candy Eyeballs


Instructions

  1. Prepare the Dough: Heat oven to 375°F. In a medium bowl, stir together the sugar cookie mix, softened butter, and egg until a soft dough forms. Then fold in the 1/4 cup of candy sprinkles evenly.
  2. Shape and Roll Cookies: Shape the dough into 36 balls, each about 1 1/4 inches in diameter. Heavily roll each ball in the colored sugar to coat completely. Place the balls about 2 inches apart on ungreased cookie sheets. Discard any leftover sugar after rolling the balls.
  3. Bake Cookies: Bake the cookies for 7 to 9 minutes or until the edges are lightly golden brown. Remove from oven and cool on the cookie sheets for 1 minute.
  4. Add Candy Eyeballs and Cool: Immediately press one candy eyeball onto the top of each cookie. Transfer cookies to a cooling rack and let cool completely, about 30 minutes.
  5. Store: Once cooled, store the cookies covered at room temperature to keep them fresh.

Notes

  • Make sure to discard any leftover colored sugar after rolling the dough balls to prevent contamination.
  • Press the candy eyeballs on immediately after removing cookies from the oven while they’re still warm so they stick properly.
  • These cookies keep well for several days when stored in an airtight container at room temperature.
  • You can substitute colored sanding sugar of your choice if you don’t have the Betty Crocker colored sugars.
  • Allow cookies to cool completely before stacking to avoid smudging or cracking the decorations.
