- 1 tablespoon lemon juice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 3 tablespoons low sugar pectin, rounded tablespoons

Instructions
- Prepare Peaches: Peel, pit, and slice the peaches. Use a kitchen chopping gadget followed by a potato masher to chop the peaches into small bits—not a puree—ensuring a textured jam.
- Combine Ingredients and Heat: Heat a large pot over medium heat on the stove. Add the chopped peaches, lemon juice, spices, and low sugar pectin. Gradually increase heat to medium-high and bring the mixture to a hard boil, which means it continues to boil rapidly even when stirred. This will take about 20 minutes.
- Prepare Sugar and Jars: While the jam mixture heats, measure out the sugar in a separate bowl. Wash jars in very hot water, let the water sit in the jars for 2-3 minutes to warm them up, then dry the jars by overturning them on a clean towel.
- Add Sugar and Boil: Once the jam reaches a hard boil, add all the sugar at once while stirring. Continue cooking on medium-high heat until the jam returns to a full, rolling boil, and then boil for 5 minutes more.
- Fill Jars: Place paper towels near the pot and carefully ladle the hot jam into the warmed jars using a funnel. Fill the jars nearly to the top without overflowing. Secure lids and rings tightly, being cautious as jars and jam will be very hot and possibly messy.
- Seal Using Inversion Method: Immediately invert each jar upside down to seal. This prevents the need to refrigerate until opened and can keep the jam shelf-stable for 12-18 months. After 24 hours, right the jars and enjoy your spiced peach jam.
- Alternative Storage for Immediate Use: For jam intended to be eaten within a short time, simply put the lids on after filling without inversion. The lids will seal with characteristic popping sounds within an hour. Store these jars in the refrigerator, where they will keep for a couple of months.
