This Oyster Cracker Churro Snack Mix is a delightful sweet and crunchy treat combining buttery toffee-coated oyster crackers with a warm cinnamon-sugar dusting.   • 9 oz Oyster crackers (about 5 cups)

Toffee Coating

  • 1 cup Unsalted butter
  • 1 cup Dark brown sugar (or light brown sugar)
  • 1 tsp Vanilla extract
  • 2 tsp Ground cinnamon (divided)

Cinnamon Sugar Topping

  • 3 tbsp Granulated sugar
  • 3/4 tsp Kosher salt
  • 1 tsp Ground cinnamon (from the divided 2 tsp)


Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an extra large rimmed baking sheet with aluminum foil and then parchment paper to prevent sticking.
  2. Arrange Crackers and Mix Topping: Spread the oyster crackers in a single even layer on the prepared baking sheet. In a small bowl, combine 1 teaspoon ground cinnamon, granulated sugar, and kosher salt; set this cinnamon sugar mixture aside.
  3. Make Toffee Sauce: In a small heavy-bottomed saucepan over medium heat, melt the butter and brown sugar together. Bring to a boil and allow to boil for 2 minutes, stirring occasionally to prevent burning. Remove from heat and stir in the vanilla extract and the remaining 1 teaspoon cinnamon.
  4. Coat Crackers and Bake: Pour the warm toffee sauce evenly over the oyster crackers on the baking sheet and gently toss or stir to coat all crackers thoroughly. Spread them out evenly again.
  5. Bake and Finish: Bake in the preheated oven for 10 minutes, until the mixture is bubbly and golden. Immediately remove from oven and sprinkle the reserved cinnamon sugar mixture evenly over the hot crackers.
  6. Cool and Serve: Let the snack mix cool completely on the baking sheet. Once cooled, break apart into clusters or individual pieces before serving.
