- 4–5 Peaches, sliced
- 1/2 cup Brown sugar
- 1 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 1/4 teaspoon Ginger
- 1 tablespoon Cornstarch
- 1/4 teaspoon Salt
- 1 tablespoon Lemon juice
- 1 teaspoon Vanilla
Additional:
- 1 Egg
- 1 sheet Puff pastry
- 1 tablespoon Apricot preserves (optional)
Instructions
- Preheat oven and prepare filling: Preheat the oven to 425°F. In a small bowl, mix brown sugar, cinnamon, nutmeg, ginger, cornstarch, and salt.
- Prepare peaches: In a large bowl, toss peach slices with lemon juice and vanilla. Coat with the brown sugar mixture and let sit for 10 minutes.
- Assemble galette: Roll out the puff pastry on a floured surface. Arrange the peach slices on the pastry, leaving a border. Fold the edges of the pastry over the peaches.
- Bake: Beat the egg and brush it on the pastry edges. Sprinkle with coarse sugar if desired. Bake for 25-30 minutes until golden.
- Optional glaze: Heat apricot preserves, then brush over the baked galette before serving.
