Shrimp:
- 1 lb shrimp (peeled and deveined)
Asparagus:
- 1 bunch asparagus (trimmed, 1-inch pieces)
Mushrooms:
- 1 cup mushrooms (sliced)
Others:
- 2 garlic cloves (minced)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp soy sauce
- 1 tbsp lemon juice
Instructions
- Heat 1 tbsp olive oil in a skillet or wok over medium-high heat.
- Add 1 tbsp olive oil to the pan, sauté asparagus and mushrooms for 3–4 minutes.
- Return shrimp to the pan, stir in soy sauce and lemon juice, and combine.
- Serve hot over rice, noodles, or quinoa.
Cook shrimp for 2–3 minutes until pink and opaque. Remove and set aside.
Add garlic, salt, and pepper, cook for 1 minute.
Notes
- For gluten-free, use tamari instead of soy sauce.
- Substitute tofu for shrimp for a vegetarian option.
