Description

These Slow Cooker Chicken Fajitas are a delicious and easy weeknight meal that the whole family will love. Tender chicken, flavorful spices, and colorful bell peppers come together for a satisfying dinner that can be customized with your favorite toppings.


Ingredients

For the Chicken Fajitas:

  • 2 lbs boneless skinless chicken breasts
  • 1 (14.5 oz) can petite diced tomatoes with green chilies
  • 3 bell peppers (preferably 1 red, 1 yellow, and 1 green), cored and sliced
  • 1 large yellow onion, halved and sliced
  • 4 cloves garlic, minced
  • 2 1/2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 3/4 tsp ground coriander*
  • 1 tsp salt
  • 3/4 tsp pepper
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey

For serving:

  • 12 6-inch flour tortillas
  • Cilantro, sour cream, salsa, guacamole or sliced avocados, shredded Mexican cheese (optional)

Instructions

  1. Pour Ingredients into Slow Cooker: Pour half of the canned tomatoes into the bottom of a slow cooker. Add half of the peppers and onions. Sprinkle minced garlic. Place chicken breasts on top.
  2. Season the Chicken: In a bowl, mix chili powder, cumin, paprika, coriander, salt, and pepper. Sprinkle half of the seasoning over the chicken, flip chicken, and add the rest of the seasoning. Top with remaining tomatoes, peppers, and onions.
  3. Cook: Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours until chicken is cooked and veggies are tender.
  4. Shred Chicken and Add Flavor: Remove chicken, shred or slice. Remove 1 cup of broth from the slow cooker. In a bowl, mix lime juice and honey. Add the mixture to the slow cooker along with the chicken. Adjust seasoning if needed. Serve warm in tortillas with optional toppings.

Notes

  • *Oregano can be substituted for coriander for a different flavor.
  • If you prefer bell peppers tender-crisp, add them in the last 30 minutes of cooking.
  • Extra toppings like cheese and guacamole are not included in the nutritional information.
