Sweet Potatoes:

- 2 1/4 teaspoons salt, divided
Seasoning:
- 3 tablespoons melted butter
- 2 teaspoons Italian seasoning
- 2 garlic cloves, grated
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper
- 1/4 cup Grated Parmesan cheese
Instructions
- Preheat oven: Preheat the oven to 450˚F. Brush 2 large rimmed baking sheets with olive oil.
- Cook sweet potatoes: Boil sweet potatoes in salted water until fork-tender. Drain and place on baking sheet.
