Description

These Soft Pretzel Bites are a delightful snack or appetizer, with a chewy exterior and soft interior. Perfectly seasoned with pretzel salt, these bite-sized treats are great for sharing or enjoying on your own.


Ingredients

Pretzel Dough:

  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 tablespoon light brown sugar
  • 1 1/2 cups warm water (about 110°F)
  • 1 tablespoon cooled melted butter or neutral oil
  • 3/4 teaspoon fine salt
  • 4 1/4 cups all-purpose flour

Baking Soda Bath:

  • 6 cups water
  • 1/4 cup baking soda

Egg Wash:

  • 1 large egg
  • 1 tablespoon water

Topping:

  • Pretzel salt or coarse sea salt

Instructions

  1. Make the dough: In the bowl of a stand mixer, combine all dough ingredients. Mix until combined. Knead on medium speed for 7-10 minutes. Let rise for 1 hour.
  2. Preheat oven: To 400°F. Line baking sheets with parchment paper.
  3. Shape the pretzels: Divide dough into 12 pieces. Roll into logs and cut into 1 1/2-inch pieces. Place on prepared baking sheets.
  4. Prepare the baking soda bath: Boil water and add baking soda. Boil pretzel bites for 30 seconds. Brush with egg wash and salt.
  5. Bake the pretzels: Bake at 400°F for 12-15 minutes, until golden brown.

Notes

  • Serve warm with Beer Cheese Dip.
  • Use active dry yeast if instant yeast is not available.
