Description

These Strawberry Sugar Cookies are a delightful treat with a burst of strawberry flavor in every bite. Coated in sparkling strawberry sugar, they are perfect for any occasion.

STRAWBERRY SUGAR COOKIES:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 large eggs, room temperature
  • 3 cups (375g) all-purpose flour
  • 2 Tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 1/2 cups (300g) granulated sugar
  • 6 Tablespoons (36g) freeze dried strawberry powder
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure strawberry extract
  • 1/2 teaspoon red gel food coloring

SPARKLING STRAWBERRY SUGAR:

  • 1/2 cup white or red sparkling sugar
  • 1 Tablespoon freeze dried strawberry powder

Instructions

  1. PREPARE FREEZE-DRIED STRAWBERRY POWDER: Blend or process the strawberries into a fine powder. Combine with sugar and store.
  2. PREPARE SPARKLING STRAWBERRY SUGAR: Mix fruit powder with sparkling sugar and store.
  3. PREHEAT OVEN: Preheat to 350℉ and line baking sheets with parchment paper.
  4. PREPARE COOKIE DOUGH: Cream butter and sugar, add eggs, extracts, and food coloring. Mix dry ingredients separately, then combine. Chill dough.
  5. ASSEMBLE COOKIES: Roll dough into balls, coat in Sparkling Strawberry Sugar, and place on baking sheets.
  6. BAKE: Bake for about 10 minutes until set. Cool on a rack.
  7. STORAGE: Store in an airtight container.

Notes

  • For a stronger strawberry flavor, you can add more freeze dried strawberry powder to the cookie dough.
  • Make sure the cookies have enough space between them on the baking sheet to spread while baking.
