Description

These savory Spinach Dip Pinwheels are a delightful appetizer combining creamy spinach mixture with crispy bacon and water chestnuts, all wrapped in tender tortillas. Perfect for parties or gatherings, they are easy to prepare and always a crowd-pleaser.

Ingredients

Units Scale

For the Filling

  • 10 oz frozen chopped spinach, thawed and well-drained
  • 4 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup Knorr Vegetable Recipe Mix (half packet)
  • 1/2 cup bacon pieces
  • 4 water chestnuts, chopped

For the Wrap

  • 4 spinach flour tortillas

Instructions

  1. Prepare the Water Chestnuts: Chop the water chestnuts into small pieces and set aside.
  2. Mix the Filling: In a large bowl, combine the thawed spinach, softened cream cheese, mayonnaise, sour cream, and Knorr Vegetable Recipe Mix. Mix until well blended.
  3. Add Crispy Elements: Fold in the chopped water chestnuts and bacon pieces into the spinach mixture.
  4. Assemble the Pinwheels: Take a spinach flour tortilla and spread about a quarter of the spinach mixture evenly over it. Roll up the tortilla tightly from one end to the other. Repeat with all tortillas.
  5. Chill the Rolls: Wrap each rolled tortilla in plastic wrap and refrigerate for at least one hour to set.
  6. Slice and Serve: Remove plastic wrap, trim the ends of each roll, and cut into 6 slices each (about 1 inch). Arrange on a platter and serve.

Notes

  • Ensure the spinach is well drained to prevent sogginess.
  • For extra flavor, add a sprinkle of garlic powder or chopped fresh herbs into the filling.
  • These pinwheels can be made a day in advance; keep refrigerated until serving.
  • For a vegetarian option, omit bacon or substitute with vegetarian bacon or crispy fried onions.
